Summary[edit] Description: Flower of Apios americana (about 80 mm). Variously called hopniss (its Delaware name), Indian potato, potato bean, or groundnut, the edible tubers of this plant were a staple in North America, and have been introduced in Europe and Asia with varying degrees of success. Said to be a nitrogen fixer, as are many legumes. Photographed on 10 Mile Creek Greenway, Knoxville, Tennessee, August 18th, 2009. Here it competes with invasive Chinese yam (Dioscorea oppositifolia).
